Soy and Ginger Prawns
Ingredients:
1 Kilos easy peel prawns or prawns in the shell
1/2 cup soy sauce(low sodium)
1/2 cup sake or mirin wine
2cm grated ginger
1 clove garlic grated
Juice of one lime
Olive oil for frying
20g shredded basil ( for the mushrooms)
1 packet shataki mushrooms
Directions:
Heat all the ingredients in a saucepan. Once warm pour it into a bowl. Add the prawns and let them marinade for 30 minutes. Make sure they are all coated. Drain the marinade.

Pan fry the prawns in a drizzle of olive oil. Add a tablespoon of the marinade for flavour.

When cooked through remove the prawns.

Pan fry the shataki mushrooms in the same pan with a dash of olive oil. Once cooked add the shredded basil and leave in the oven to wilt.

Serve with a big garden salad.
