Mini Quiches
Ingredients:
Cooking Spray
2 pieces of mountain bread cut into even squares
4 eggs
1/2 tsp. of natural vegetable stock powder
1 cup of corn
1/2 cup finely diced mushroom
1/4 onion finely diced
100g lean ham finely diced
1/2 zucchini finely diced
1 tsp. of Garlic powder
1/2 tsp. paprika
Directions:
1. Using a 12 cup muffin tray, apply cooking spray to a non stick muffin tray.
2. Press a piece of mountain bread into each of the tray cups.
3. Prepare the filling like an omelette: Beat 4 eggs, add salt, pepper, stock powder(I use Massel), corn, mushroom, onion, ham and zucchini.(anything you like really - asparagus is good too!) 4.Add some garlic powder and paprika to season.
5. Mix well and spoon up mixture evenly into each tray cup.
6. Bake at 180 degrees for 12-15 mins or until the quiches are set.
